Ingredients
1 cup unsalted butter
0.5 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1.5 cups all-purpose flour
0.33 cup unsweetened cocoa powder
0.25 teaspoon salt
0.25 cup heavy cream
0.75 cup semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream the butter and sugar together until light and fluffy.
3. Beat in the egg yolk and vanilla extract until smooth.
4. Add the flour, cocoa powder, and salt to the bowl and mix until the dough is well combined.
5. Scoop out tablespoon-sized portions of dough and roll into balls.
6. Place dough balls on the prepared baking sheet and gently press a thumbprint into the center of each one.
7. Bake for 10–12 minutes until the edges are set and the centers are slightly soft.
8. While cookies cool, heat the heavy cream until just simmering, then pour over the chocolate chips in a bowl.
9. Let sit for 1 minute, then stir until the ganache is smooth and glossy.
10. Spoon or pipe the ganache into each cooled cookie’s center.
11. Allow cookies to set at room temperature or chill briefly in the fridge before serving.
Notes
Cookies can be frozen before or after filling.
