Ingredients
1 cup unsalted butter
1 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
3/4 cup Dutch-process cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter (softened)
1 3/4 cups powdered sugar
2 tablespoons heavy cream
1/2 teaspoon vanilla extract (or almond/peppermint, optional)
Instructions
1. Beat the butter, granulated sugar, and brown sugar until light and fluffy.
2. Add the egg and vanilla extract and mix until smooth.
3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
4. Gradually mix the dry ingredients into the wet mixture until a dough forms.
5. Chill the dough in the refrigerator for 30 minutes.
6. Preheat oven to 350°F (175°C). Scoop dough into balls and place on a parchment-lined baking sheet.
7. Bake for 8–10 minutes until just set. Let cool completely.
8. In a new bowl, beat butter and powdered sugar for the filling. Add cream and vanilla, beat until fluffy.
9. Spread or pipe the filling onto half the cookies and sandwich with the remaining halves.
10. Store in an airtight container. Enjoy!
