Description

These Chocolate Peppermint Sandwich Cookies are a festive holiday treat combining chewy chocolate cookies with creamy peppermint filling. Perfect for cookie exchanges, gift boxes, or cozy nights in, they balance rich cocoa flavor with cool peppermint. This recipe is easy to make, freezer-friendly, and crowd-pleasing. Keywords: chocolate peppermint cookies, holiday sandwich cookies, festive baking, mint chocolate desserts.

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

0.5 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1.75 cups all-purpose flour

0.75 cup unsweetened cocoa powder

1 teaspoon baking soda

0.25 teaspoon salt

0.5 cup unsalted butter, softened (for filling)

2 cups powdered sugar

0.5 teaspoon peppermint extract

2 tablespoons heavy cream

Instructions

1. Cream butter, brown sugar, and granulated sugar until light and fluffy.

2. Add egg and vanilla extract; mix well.

3. In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.

4. Gradually mix dry ingredients into the wet mixture to form a dough.

5. Chill dough in the fridge for 30 minutes.

6. Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets.

7. Bake at 350°F (175°C) for 8–10 minutes. Cool completely.

8. For the filling, beat butter and powdered sugar until smooth.

9. Add peppermint extract and heavy cream; beat until fluffy and spreadable.

10. Spread filling onto half the cookies, then top with remaining cookies.

11. Optional: roll edges in crushed peppermint candies.

12. Store in an airtight container for up to 5 days or freeze for a month.

Notes

These cookies freeze beautifully.

Crushed candy canes add crunch and festive flair.

Chilling the dough helps with shape and prevents spreading.
