Description

These Chocolate Mint Brownies are rich, fudgy, and layered with a refreshing peppermint frosting and silky ganache topping. Perfect for holidays, cookie swaps, or anytime you’re craving chocolate mint desserts. Includes simple ingredients, easy steps, and make-ahead tips.


Ingredients

1 cup unsalted butter

1 cup granulated sugar

4 large eggs

1 teaspoon vanilla extract

0.75 cup unsweetened cocoa powder

0.75 cup all-purpose flour

0.25 teaspoon salt

0.5 cup unsalted butter (for frosting)

2 cups powdered sugar

2 tablespoons heavy cream

1 teaspoon peppermint extract

2 drops green food coloring (optional)

1.5 cups semi-sweet chocolate chips

2 tablespoons heavy cream or butter (for ganache)


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.

2. Melt 1 cup butter in a saucepan or microwave, then mix in sugar, eggs, and vanilla.

3. Stir in cocoa powder, flour, and salt until combined. Spread into the pan and bake for 22–25 minutes. Let cool completely.

4. For the mint frosting, beat 0.5 cup softened butter with powdered sugar, 2 tbsp cream, and peppermint extract until smooth. Add green food coloring if desired.

5. Spread the frosting evenly over the cooled brownie layer. Chill in the fridge until set.

6. For the ganache, melt chocolate chips with 2 tbsp cream or butter until smooth. Pour over mint layer and gently spread.

7. Chill again for 30–45 minutes until ganache is firm.

8. Slice with a warm knife for clean edges and serve.

Notes

These brownies slice best after chilling.

You can skip the food coloring if you prefer a natural look.

Use high-quality chocolate chips for a smoother ganache.
