Description
Moist and fluffy Chocolate Chip Coffee Muffins infused with brewed coffee and loaded with melty chocolate chips. The perfect breakfast treat or midday snack, combining the bold flavor of coffee with sweet bakery-style muffins.
Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup strong brewed coffee, cooled
1/2 cup milk
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
3/4 cup mini chocolate chips, plus extra for topping
Instructions
1. Preheat oven to 375°F and line a muffin pan with paper liners.
2. In a large bowl, whisk together flour, baking powder, salt, granulated sugar, and brown sugar.
3. In another bowl, mix brewed coffee, milk, vegetable oil, egg, and vanilla extract.
4. Add wet ingredients to the dry mix and stir until just combined. Avoid overmixing.
5. Gently fold in mini chocolate chips.
6. Divide batter into muffin liners, filling each about 3/4 full.
7. Sprinkle extra chocolate chips on top if desired.
8. Bake for 17 to 20 minutes, or until a toothpick comes out clean.
9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
10. Serve warm or store for later.
Notes
These muffins freeze well for up to 3 months.
For extra flavor, use espresso powder instead of brewed coffee.
Do not overmix the batter to keep muffins light and fluffy.
