Description

Ingredients

1.5 pounds boneless skinless chicken thighs

2 chipotle peppers in adobo (plus 1 tablespoon adobo sauce)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

0.5 teaspoon salt

3 cups cooked white or brown rice

1.5 cups black beans

1.5 cups corn kernels

1 avocado diced

0.25 cup fresh chopped cilantro

1 lime cut into wedges

0.5 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

1 tablespoon lime juice


Instructions

1. Combine chopped chipotle peppers, olive oil, garlic powder, cumin, smoked paprika, and salt in a bowl. Add chicken and coat evenly. Marinate for at least 30 minutes or up to overnight.

2. Heat a skillet over medium-high heat and cook the marinated chicken for 5–7 minutes per side until fully cooked and browned. Rest, then slice.

3. Blend Greek yogurt, mayonnaise, lime juice, and remaining chipotle pepper with adobo sauce until smooth. Taste and adjust the heat if needed.

4. Start each bowl with a base of cooked rice. Add sliced chicken, black beans, corn, avocado, and a generous spoonful of chipotle sauce. Top with cilantro and lime wedges.

5. Store leftovers in separate airtight containers for up to 4 days. Reheat rice and chicken, and add cold toppings when ready to serve.

Notes

Store sauce separately in a jar with a tight lid to keep flavors fresh.

Use a meat thermometer to avoid overcooking chicken breasts (pull at 165°F).

Add pickled onions or grilled vegetables for extra zing and color.
