Ingredients
500g pork shoulder
2 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon brown sugar
1 tablespoon Shaoxing wine
1 teaspoon Chinese five-spice powder
2 cloves garlic, minced
1 teaspoon sesame oil
1 teaspoon white pepper
1 cube red fermented bean curd (optional)
Instructions
1. In a medium bowl, mix hoisin sauce, soy sauce, honey, brown sugar, Shaoxing wine, Chinese five-spice, garlic, sesame oil, white pepper, and red fermented bean curd (if using). Stir until smooth.
2. Cut the pork shoulder into long strips. Add to the marinade and coat well. Cover and refrigerate for at least 6 hours, preferably overnight.
3. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack over it.
4. Place marinated pork strips on the rack. Reserve extra marinade. Roast for 20 minutes.
5. Baste the pork with reserved marinade. Roast for another 10 minutes. Flip, baste again, and roast an additional 10 to 15 minutes.
6. Optional: broil for 1 to 2 minutes to achieve extra caramelization.
7. Let rest for 5 minutes before slicing and serving.
Notes
Marinate overnight for the deepest flavor.
Broil at the end for an authentic charred finish.
Use a meat thermometer to avoid overcooking.
