Ingredients
1.5 lbs chicken thighs or breasts
1 cup long-grain white rice
5 garlic cloves, minced
2.5 cups chicken broth
0.75 cup grated Parmesan cheese
2 tablespoons butter
1 tablespoon olive oil
0.5 teaspoon salt
0.25 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken with salt and pepper on both sides.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden on each side, then remove and set aside.
3. Lower heat to medium and add butter and garlic to the same skillet. Cook until fragrant and lightly golden.
4. Stir in the rice, coating it well with the garlic butter.
5. Pour in the chicken broth and bring to a simmer. Nestle the seared chicken into the rice.
6. Cover and simmer for 20–25 minutes, or until the rice is tender and the chicken is cooked through.
7. Remove from heat and stir in Parmesan cheese.
8. Top with fresh parsley and serve hot.

Use long-grain rice like jasmine or basmati to keep the dish fluffy and flavorful.
Let the dish rest for 5 minutes before serving to help the rice absorb any remaining broth.
