Ingredients
2 chicken breasts
2 tablespoons olive oil
2 tablespoons butter
4 garlic cloves, minced
1 cup white rice
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons chopped parsley
Instructions
1. Slice the chicken breasts into cutlets and season with salt and pepper.
2. Heat olive oil and butter in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.
3. In the same skillet, add more butter and sauté the minced garlic for 30 seconds until fragrant.
4. Add white rice and stir to coat in the garlic butter. Toast for 1–2 minutes.
5. Pour in the chicken broth and bring to a simmer. Cover and cook for 15 minutes or until rice is tender and liquid is absorbed.
6. Stir in the heavy cream and Parmesan cheese. Simmer while stirring until thick and creamy.
7. Return chicken to the skillet, nestling it into the rice.
8. Drizzle with lemon juice, garnish with parsley, and serve warm.
