Description

This Chicken Rogan Josh recipe is a flavorful Indian chicken curry made with tender chicken thighs, creamy yogurt, and a bold blend of aromatic spices. Ingredients

500g chicken thighs

150g plain yogurt

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

1 teaspoon paprika

1/4 teaspoon cayenne pepper (optional)

1/4 teaspoon ground cinnamon

4 cardamom pods or 1/2 teaspoon ground cardamom

1 large onion, chopped

2 tablespoons tomato paste

400g crushed tomatoes

2 tablespoons vegetable oil or ghee

1 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped (for garnish)


Instructions

1. In a bowl, combine yogurt, garlic, ginger, and half of the spices. Add chicken and coat well. Cover and refrigerate for at least 30 minutes.

2. Heat oil or ghee in a skillet over medium heat. Add chopped onions and cook until golden.

3. Stir in the remaining spices and cook for 2 minutes until fragrant.

4. Add tomato paste and crushed tomatoes. Simmer for 5 minutes.

5. Add marinated chicken and yogurt mixture. Stir well.

6. Reduce heat to low, cover, and simmer for 20–25 minutes until chicken is tender.

7. Adjust seasoning as needed, garnish with cilantro, and serve hot with rice or naan.

Notes

Marinate the chicken overnight for deeper flavor.

Use ghee for a richer, more authentic taste.

Adjust cayenne to control the heat level.
