Ingredients

1 pound rigatoni pasta

2 large chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

3 cloves garlic, minced

2 tablespoons butter

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1/2 cup reserved pasta water (as needed)


Instructions

1. Bring a large pot of salted water to a boil and cook the rigatoni until al dente. Drain and reserve 1/2 cup of pasta water.

2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear chicken until golden and cooked through. Remove and slice into strips.

3. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.

4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, mixing until the sauce thickens. Add reserved pasta water if needed to loosen the sauce.

5. Add cooked rigatoni and sliced chicken to the sauce. Stir to combine and heat through for 2-3 minutes.

6. Remove from heat, garnish with chopped parsley and extra Parmesan, then serve immediately.

Notes

Use freshly grated Parmesan for best melting and flavor.

Add spinach, mushrooms, or sun-dried tomatoes for variation.

Reheat with a splash of milk or cream to restore creaminess.
