Description

This Chicken Potato Broccoli Casserole recipe is a cozy, cheesy, and satisfying dinner loaded with tender chicken, roasted potatoes, fresh broccoli, and a creamy cheddar sauce. It’s the perfect weeknight family meal and a great make-ahead casserole. Comfort food made easy!


Ingredients

2 cups diced chicken breast

3 cups cubed russet potatoes

2 cups broccoli florets

1 1/2 cups shredded cheddar cheese

1 can cream of chicken soup (10.5 oz)

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil


Instructions

1. Preheat the oven to 400°F.

2. Peel and dice the potatoes into small cubes, then toss them with olive oil, salt, and pepper.

3. Spread the potatoes on a baking sheet and roast for 25 minutes or until golden and crispy.

4. Meanwhile, dice the chicken breast and cook it in a skillet over medium heat until cooked through. Season with garlic powder and onion powder.

5. Lightly steam the broccoli florets until tender but still vibrant.

6. In a large bowl, combine the roasted potatoes, cooked chicken, steamed broccoli, cream of chicken soup, sour cream, and half the cheddar cheese.

7. Mix everything thoroughly until well combined.

8. Transfer the mixture into a greased 9×13-inch casserole dish.

9. Sprinkle the remaining cheddar cheese evenly over the top.

10. Bake at 375°F for 20–25 minutes, until the cheese is melted and bubbly.

Notes

Let it cool for 5–10 minutes before serving to help it set.

You can use frozen broccoli—just thaw and drain before using.

For extra flavor, sprinkle cooked bacon bits or crushed crackers on top.
