Description

Ingredients

2 cups cooked white rice

2 cups cooked chicken breast, diced

2 cups broccoli florets, lightly steamed

1 can (10.5 oz) cream of chicken soup

1 cup shredded cheddar cheese

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or butter


Instructions

1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a skillet, heat olive oil or butter over medium heat. Add diced chicken, season with salt, pepper, garlic powder, and onion powder, and cook until fully done.

3. Steam broccoli florets until just tender and vibrant green.

4. In a large bowl, mix together cooked rice, cooked chicken, broccoli, cream of chicken soup, milk, and half of the shredded cheddar cheese.

5. Spread the mixture evenly into the prepared baking dish.

6. Sprinkle remaining cheese on top.

7. Bake for 25–30 minutes or until the casserole is bubbly and golden brown on top.

8. Let cool slightly before serving.

Notes

This recipe can be made ahead and refrigerated up to 24 hours before baking.

Leftovers reheat beautifully in the microwave or oven.

To save time, you can use rotisserie chicken or pre-cooked frozen rice.
