Description

Ingredients

1 lb chicken breast or thighs

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

1/2 cup all-purpose flour or gluten-free flour

1 large egg

1 cup breadcrumbs or panko

1 cup diced strawberries

1 small jalapeño, finely chopped

2 tbsp chopped fresh mint leaves

1 tbsp lime juice

1 tsp honey (optional)

2 tbsp olive oil


Instructions

1. Cut the chicken into bite-sized chunks. Season with salt, pepper, garlic powder, and paprika. Let marinate for 10 minutes.

2. Set up a breading station with flour, beaten egg, and breadcrumbs. Dredge each chicken piece through flour, then egg, then breadcrumbs.

3. Heat olive oil in a skillet over medium heat. Cook chicken bites in batches for 4 minutes per side until golden and cooked through. Alternatively, air fry at 400°F for 12–14 minutes, flipping halfway.

4. In a bowl, mix diced strawberries, chopped jalapeño, mint, lime juice, and honey. Let sit for 5–10 minutes to allow the flavors to meld.

5. Serve the chicken bites over rice, quinoa, or greens. Top with strawberry-jalapeño mint salsa and garnish with extra mint or lime juice.

Notes

Keep salsa and chicken stored separately to maintain texture.

Use an air fryer to keep this dish lighter and crispier.
