Ingredients
1 cup cooked shredded chicken
1 ripe avocado, mashed
2 slices cheddar cheese
4 slices tomato
2 slices sourdough bread
1 tablespoon butter
1 pinch salt
1 pinch black pepper
Instructions
1. Slice tomato and mash avocado with a pinch of salt and pepper. Prepare chicken if not already shredded.
2. Butter the outside of both bread slices.
3. Spread mashed avocado on one slice of bread (non-buttered side).
4. Layer chicken, tomato slices, and cheddar cheese over the avocado.
5. Top with the second slice of bread, buttered side facing out.
6. Heat a skillet over medium heat and add the sandwich.
7. Press gently with a spatula and cook for 3–4 minutes until golden.
8. Flip and grill the other side until cheese is melted.
9. Remove from skillet, let rest for a minute, then slice and serve warm.
