Description

A wholesome Chicken and Sweet Potato Skillet packed with lean protein, fiber-rich sweet potatoes, and aromatic herbs. This one-pan meal is perfect for weeknight dinners, naturally gluten-free, and full of flavor. Great for meal prep and family meals.


Ingredients

2 medium sweet potatoes

1 lb chicken breast

2 tbsp olive oil

2 cloves garlic

1 small red onion

1 tsp smoked paprika

1 tsp fresh thyme

1 tsp salt

1/2 tsp black pepper

1 tbsp lemon juice


Instructions

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and caramelize.

2. Push sweet potatoes to the side and add remaining olive oil, chopped red onion, and minced garlic. Sauté until onions are translucent and garlic is fragrant.

3. Season chicken pieces with salt, pepper, and smoked paprika. Add them to the skillet and cook for about 6-8 minutes or until browned and cooked through.

4. Add fresh thyme and lemon juice. Toss everything together in the pan until well combined and heated through. Serve hot.

Notes

Use chicken thighs for extra flavor and moisture.

Add spinach or kale during the last few minutes for a leafy green boost.

To make it spicier, toss in a pinch of red pepper flakes with the paprika.
