Ingredients
1 pound fettuccine
2 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 ½ cups heavy cream
1 cup freshly grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on both sides and cooked through. Remove from skillet and let rest.
3. In a large pot, cook fettuccine in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
4. In the same skillet, melt butter over medium heat. Add garlic and sauté for about 1 minute until fragrant.
5. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and continue stirring until the sauce is smooth and creamy.
6. Slice the cooked chicken.
7. Add the cooked pasta to the Alfredo sauce and toss to coat. Use a splash of pasta water to loosen the sauce if needed.
8. Add sliced chicken on top or mix it in gently.
9. Garnish with parsley and extra black pepper if desired.
10. Serve immediately and enjoy!
