Ingredients
1 ripe banana
1 cup old-fashioned oats
3/4 cup all-purpose flour
1/2 cup brown sugar
1 large egg
1/4 cup unsalted butter, melted
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mash the ripe banana until mostly smooth.
3. Add melted butter, brown sugar, egg, and vanilla to the banana. Mix until combined.
4. Stir in flour, baking soda, cinnamon, and salt until incorporated.
5. Fold in the oats until evenly mixed. Add optional mix-ins like chocolate chips or nuts if desired.
6. Scoop heaping tablespoons of dough onto the baking sheet.
7. Bake for 10–12 minutes or until edges are golden and centers are just set.
8. Let cool for a few minutes before transferring to a wire rack.
Notes
Use very ripe bananas for best flavor and moisture.
Old-fashioned oats provide the best chewy texture—avoid steel-cut.
