Description

Cheesy Velveeta Rotini with Italian Beef Marinara is the ultimate comfort food recipe that blends creamy Velveeta cheese with tender rotini pasta and savory Italian-style beef marinara. Perfect for quick weeknight dinners or hearty family meals, this cheesy pasta dish is rich, satisfying, and full of flavor.

Ingredients

340g rotini pasta

450g ground beef

1 medium yellow onion, chopped

3 garlic cloves, minced

800g crushed tomatoes

2 tablespoons tomato paste

1 tablespoon Italian seasoning

1/2 teaspoon red pepper flakes

Salt and pepper to taste

225g Velveeta cheese, cubed

1 cup whole milk

1 tablespoon olive oil

Instructions

1. Bring a large pot of salted water to a boil and cook rotini until al dente. Drain and set aside.

2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking apart as it cooks. Drain excess fat.

3. Add chopped onion and minced garlic to the skillet. Sauté until onions are soft and translucent.

4. Stir in crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 20 minutes.

5. In a separate saucepan, heat milk over low heat. Add Velveeta cubes and stir constantly until smooth and melted.

6. Add cooked rotini to the cheese sauce, stirring to coat well. Fold in the beef marinara mixture. Mix thoroughly and serve warm.

Notes

This dish reheats well with a splash of milk to revive the creaminess.

You can swap beef for ground turkey or sausage for variation.

Add chopped spinach or roasted bell peppers for a veggie boost.
