Description

Ingredients

2 cups cheese tortellini

1 tablespoon olive oil

1 medium yellow onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 can (28 oz) crushed tomatoes

3 cups vegetable broth

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella or Parmesan cheese


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft, about 5 minutes.

2. Add garlic and tomato paste. Cook for 1 minute, stirring to release fragrance.

3. Pour in crushed tomatoes and vegetable broth. Stir in Italian seasoning, salt, and pepper.

4. Bring to a boil, then reduce heat and simmer for 10 minutes.

5. Add tortellini and cook according to package instructions, about 7-9 minutes.

6. Stir in heavy cream and shredded cheese. Simmer until cheese melts.

7. Adjust seasoning if needed. Serve hot with extra cheese on top if desired.

Notes

Use fresh or refrigerated tortellini for best texture.

Add extra broth when reheating to thin out thickened soup.

Toss in fresh spinach or basil at the end for extra greens.
