Description

A rich and satisfying Cheesy Tater Tot Casserole made with ground beef, crispy tater tots, cheddar cheese, and creamy mushroom sauce. This easy weeknight dinner recipe is comforting, freezer-friendly, and perfect for family meals or potlucks.


Ingredients

1 lb ground beef

1 small yellow onion, diced

1 tsp garlic powder

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese

1 bag (32 oz) frozen tater tots

1 tsp salt

0.5 tsp black pepper


Instructions

1. In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is soft.

2. Drain excess fat, then season with garlic powder, salt, and pepper.

3. Stir in cream of mushroom soup and sour cream until combined. Simmer for 2 minutes.

4. Spread the beef mixture into a greased 9×13-inch baking dish.

5. Top evenly with shredded cheddar cheese.

6. Arrange frozen tater tots in a single layer over the cheese.

7. Bake in a preheated 375°F oven for 35–40 minutes, until tater tots are golden and filling is bubbling.

8. Optionally broil for 2–3 minutes at the end for extra crispiness.

9. Let rest for 5 minutes before serving.

Notes

This casserole can be prepped a day in advance and baked later.

Feel free to add corn, peas, or green beans for a veggie boost.
