Ingredients

12 oz rigatoni

2 chicken breasts

3 garlic cloves, minced

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

4 oz cream cheese

1 cup heavy cream

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the rigatoni until just al dente. Drain and set aside, reserving 1/2 cup of pasta water.

2. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and sear chicken on both sides until cooked through. Remove and cut into bite-sized pieces.

3. In the same skillet, melt butter and sauté garlic until fragrant. Stir in cream cheese until melted. Add heavy cream and stir until smooth and slightly thickened.

4. Add Parmesan and mozzarella cheese. Stir until fully melted and combined into a creamy sauce.

5. Return chicken and pasta to the skillet. Toss to coat everything in the sauce. Add reserved pasta water as needed to thin the sauce.

6. Serve hot, garnished with chopped parsley and extra Parmesan if desired.

Notes

Use freshly grated Parmesan for better melt and flavor.

Reserve some pasta water to adjust sauce consistency.

Let chicken rest before slicing to keep juices in.
