Ingredients
12 oz rotini pasta
1 lb ground beef
1 1/2 cups sweet corn (canned or frozen)
1 packet ranch seasoning mix
4 oz cream cheese
2 cups shredded cheddar cheese
1/2 cup milk
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Boil the rotini in salted water until just al dente, then drain and set aside.
2. In a skillet over medium heat, cook ground beef until browned and cooked through. Season with salt and pepper. Drain fat.
3. Lower heat and stir in cream cheese, ranch seasoning, and milk. Stir until smooth and melted.
4. Add sweet corn and 1 cup shredded cheddar cheese. Stir until the cheese is fully melted and combined.
5. Combine pasta with the beef and cheese mixture until well coated.
6. Transfer everything into a greased baking dish. Top with the remaining shredded cheese.
7. Bake at 375°F for 15–20 minutes, or until cheese is bubbly and golden.
8. Let cool slightly, then serve warm.
