Description

This cheesy potato egg scramble recipe is the ultimate one-skillet breakfast comfort food. Made with golden potatoes, fluffy scrambled eggs, and melted cheddar cheese, it’s perfect for busy mornings or hearty brunches. Try this easy breakfast scramble packed with flavor and ready in under 20 minutes!

Ingredients

2 medium potatoes (Yukon Gold or russet), diced small

4 large eggs

1/4 cup milk

1/2 cup shredded sharp cheddar cheese

2 tablespoons butter

1/4 teaspoon salt

1/8 teaspoon black pepper

1 tablespoon chopped chives or green onions (optional)

Instructions

1. Melt butter in a large non-stick skillet over medium heat.

2. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and crispy.

3. In a mixing bowl, whisk together eggs, milk, salt, and pepper until frothy.

4. Lower heat to medium-low and pour egg mixture over the cooked potatoes.

5. Stir gently with a spatula as the eggs begin to set, creating soft curds.

6. When eggs are mostly set but still slightly wet, add shredded cheddar cheese.

7. Continue stirring gently until cheese melts and scramble is fully combined.

8. Remove from heat, garnish with chives or green onions, and serve immediately.

Notes

Use Yukon Gold potatoes for buttery texture or russets for extra crispiness.

Beat eggs thoroughly with milk for a softer, fluffier scramble.

Add in veggies or cooked meat like bacon or sausage for a heartier variation.
