Description
Cheesy Mississippi Mud Potatoes are the ultimate comfort food side dish made with tender Yukon gold potatoes, sharp cheddar, smoky bacon, and sour cream. Perfect for potlucks, BBQs, and weeknight dinners, this creamy potato casserole is easy to prep and impossible to resist.
Ingredients
3 pounds gold potatoes
1 ½ cups sour cream
2 cups shredded sharp cheddar cheese
1 pound cooked bacon, chopped
½ teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons butter, cut into small pieces
3 green onions, sliced
Instructions
1. Preheat your oven to 375°F. Wash and cut the potatoes into bite-sized chunks, leaving the skins on if desired.
2. In a large mixing bowl, combine potatoes, sour cream, 1 ½ cups of cheddar, half the cooked bacon, garlic powder, salt, and pepper. Toss until evenly coated.
3. Transfer the mixture into a greased 9×13 baking dish. Dot the top with butter.
4. Cover with foil and bake for 45 minutes.
5. Remove foil, sprinkle remaining cheese and bacon on top.
6. Return to oven and bake uncovered for 15 to 20 minutes, until bubbly and golden.
7. Remove from oven and top with sliced green onions.
8. Let rest 10 minutes before serving.
Notes
This dish can be assembled a day in advance and baked just before serving.
Feel free to substitute Greek yogurt for sour cream for a lighter option.
To spice things up, add jalapeños or a pinch of cayenne to the mix.
