Cheesy Mashed Potato Puffs are a crispy, fluffy, and cheesy way to use leftover mashed potatoes. This easy appetizer or side dish is packed with cheddar, parmesan, and herbs — baked to golden perfection. Ideal for parties, brunch, or quick snacks.
Ingredients
1 ½ cups mashed potatoes
1 cup shredded cheddar cheese
¼ cup grated parmesan cheese
2 large eggs
2 tablespoons chopped chives or green onions
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
non-stick spray or melted butter for greasing
Instructions
1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin with non-stick spray or melted butter.
2. In a mixing bowl, combine mashed potatoes, cheddar cheese, parmesan, eggs, chives, garlic powder, salt, and pepper.
3. Mix well until fully combined and the mixture is thick but scoopable.
4. Spoon the mixture into the muffin tin, filling each cup to the top and lightly pressing down.
5. Add a pinch of extra cheese on top of each puff if desired.
6. Bake for 20 to 25 minutes until tops are golden and edges are crisp.
7. Let cool slightly before removing from the tin. Serve warm with your favorite dip.
Notes
These puffs can be made ahead and frozen.
Reheat in oven or air fryer to restore crispiness.
