Ingredients
1 lb ground beef
4 medium russet potatoes, thinly sliced
2 cups shredded cheddar cheese
1 small yellow onion, chopped
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
2 tablespoons butter, melted
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large skillet, cook ground beef and chopped onion over medium heat until browned and softened. Drain excess fat and season with garlic powder, salt, and pepper.
3. In a bowl, whisk together cream of mushroom soup and milk until smooth.
4. Layer half the sliced potatoes in the prepared baking dish. Top with half the beef mixture, then half the soup mixture. Sprinkle with half the cheddar cheese.
5. Repeat layers: remaining potatoes, beef, soup mixture, and the rest of the cheese.
6. Drizzle melted butter over the top. Cover with foil.
7. Bake for 45 minutes covered, then uncover and bake an additional 15 minutes until potatoes are fork-tender and cheese is bubbly and golden.
8. Let rest 10 minutes before serving.

This casserole tastes even better the next day.
Slice potatoes thinly for even baking.
You can swap cheddar for Monterey Jack or Colby for variety.
