Ingredients
1 lb chicken breast or thighs
3 garlic cloves, minced
3 tbsp unsalted butter
1 tbsp olive oil
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
1 cup heavy cream
10 oz rigatoni pasta
2 tbsp fresh chopped parsley
Instructions
1. Heat olive oil and half the butter in a large skillet over medium-high heat. Add seasoned chicken pieces and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
2. Lower the heat, add the remaining butter and garlic. Cook for about 1 minute until fragrant, being careful not to burn it.
3. Stir in the heavy cream and let it simmer for 3–4 minutes. Add Parmesan and mozzarella cheeses and stir until melted and creamy.
4. In a separate pot, boil rigatoni pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain the pasta.
5. Return the chicken to the skillet, add the cooked rigatoni, and toss gently to coat in the sauce. Add pasta water if the sauce is too thick.
6. Garnish with extra cheese and chopped parsley. Serve hot and enjoy the creamy, cheesy goodness.
