Ingredients
8 oz bowtie pasta
2 chicken breasts
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
3 cloves garlic, minced
2 tbsp butter
2 tbsp flour
1 1/2 cups milk
1/2 cup heavy cream
1 cup shredded Parmesan cheese
1/2 cup sharp cheddar cheese
1 tsp Italian seasoning
Instructions
1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
2. Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken until golden brown and cooked through. Remove and slice.
3. In the same skillet, melt butter and sauté garlic until fragrant.
4. Stir in flour to create a roux. Cook for 1 minute.
5. Gradually whisk in milk and cream until smooth and thickened.
6. Stir in Parmesan and cheddar cheese until melted.
7. Add Italian seasoning and adjust salt if needed.
8. Toss in cooked pasta and chicken. Mix until fully coated.
9. Let rest a few minutes for flavors to meld, then serve warm with extra cheese or herbs if desired.

Use freshly grated Parmesan for the best melt and flavor.
