Description
This cheesy beef enchilada tortellini recipe combines tender cheese tortellini with bold enchilada sauce, ground beef, and creamy cheese for a one-skillet Tex-Mex comfort dish. It’s quick, hearty, and perfect for family dinners or weeknight meals.
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
2 cups red enchilada sauce
1 package (20 oz) cheese tortellini (refrigerated or frozen)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
Fresh cilantro, chopped (optional)
Instructions
1. In a large skillet over medium heat, heat olive oil and add the ground beef. Cook until browned and fully cooked through.
2. Stir in the diced onion and garlic, and sauté for 2–3 minutes until soft and fragrant.
3. Pour in the enchilada sauce and stir to combine with the beef mixture. Bring to a simmer.
4. Add cheese tortellini directly into the skillet. Stir well and let it simmer for 5 to 7 minutes, or until tortellini is fully cooked.
5. Reduce heat to low and mix in sour cream until the sauce turns creamy and smooth.
6. Sprinkle both cheeses over the top and stir until melted and combined.
7. Garnish with chopped fresh cilantro if desired and serve warm.
Notes
This dish tastes best served fresh but makes excellent leftovers too.
Frozen tortellini works well—just add 2-3 extra minutes of simmering time.
For extra heat, add some diced jalapeños or a pinch of cayenne pepper.
