Ingredients
2 cups rotini pasta
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 pound ground beef
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups sweet corn (frozen or canned)
2 cups tomato sauce
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Instructions
1. Bring a large pot of salted water to a boil and cook rotini until just al dente. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Add onion and cook for 3 minutes until soft. Add garlic and cook for 1 minute.
3. Add ground beef and cook until browned, breaking it up with a spoon. Season with Italian seasoning, salt, and pepper.
4. Stir in sweet corn and tomato sauce. Simmer for 5–7 minutes. Taste and adjust seasoning.
5. Preheat oven to 375°F (190°C). Combine cooked rotini with the beef mixture and half of the cheese.
6. Transfer mixture to a greased 9×13-inch baking dish. Top with remaining cheese.
7. Bake for 20–25 minutes, until bubbly and golden on top.
8. Let rest for 5 minutes before serving. Garnish with parsley or chili flakes if desired.
Notes
Let the pasta be slightly undercooked since it continues baking in the oven.
Use a blend of cheddar and mozzarella for the best cheesy melt and flavor.
For a spicier version, add red pepper flakes or diced jalapeños to the beef mixture.
