Ingredients
1 lb ground beef
4 medium Yukon Gold potatoes, diced
1 medium onion, diced
2 cloves garlic, minced
3 cups chicken or beef broth
2 cups cheddar cheese, shredded
1 cup milk
3 tbsp butter
3 tbsp all-purpose flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
Instructions
1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
2. Add butter, then stir in diced onion and minced garlic. Cook until softened, about 3-4 minutes.
3. Sprinkle flour over the mixture and stir for 1 minute to form a roux.
4. Slowly pour in broth while stirring constantly until smooth.
5. Add diced potatoes, salt, pepper, and paprika. Bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
6. Lower the heat and stir in milk and shredded cheddar cheese until melted and creamy.
