Ingredients

1 lb ground beef

4 medium Yukon Gold potatoes, diced

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken or beef broth

2 cups cheddar cheese, shredded

1 cup milk

3 tbsp butter

3 tbsp all-purpose flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika (optional)


Instructions

1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.

2. Add butter, then stir in diced onion and minced garlic. Cook until softened, about 3-4 minutes.

3. Sprinkle flour over the mixture and stir for 1 minute to form a roux.

4. Slowly pour in broth while stirring constantly until smooth.

5. Add diced potatoes, salt, pepper, and paprika. Bring to a boil, then simmer for 15-20 minutes until potatoes are tender.

6. Lower the heat and stir in milk and shredded cheddar cheese until melted and creamy.

7. Taste and adjust seasoning if needed. Serve hot with your favorite toppings.

Notes

This soup thickens as it sits—add a splash of broth or milk when reheating.

For extra flavor, try adding cooked crumbled bacon or a splash of hot sauce.

You can substitute ground beef with ground turkey or sausage if preferred.
