Ingredients
4 oz cream cheese
2 tbsp granulated sugar (for filling)
1 tsp vanilla extract (divided)
1 cup unsalted butter, softened
1 cup brown sugar
0.5 cup granulated sugar (for dough)
2 large eggs
2.5 cups all-purpose flour
1 tsp baking soda
0.5 tsp salt
2 cups semi-sweet chocolate chips
Instructions
1. In a bowl, mix cream cheese, 2 tbsp granulated sugar, and 0.5 tsp vanilla extract until smooth. Scoop into small balls and freeze for 30 minutes.
2. Cream butter, brown sugar, and 0.5 cup granulated sugar until fluffy. Beat in eggs and 0.5 tsp vanilla extract.
3. Add flour, baking soda, and salt. Mix until combined. Fold in chocolate chips.
4. Flatten a piece of dough in your hand, place a frozen cheesecake ball in the center, and wrap dough around it completely.
5. Chill assembled cookies for 30 minutes. Preheat oven to 350°F (175°C).
6. Bake for 12–14 minutes until edges are golden and centers are just set. Let cool slightly before serving.
Notes
Freeze the cheesecake filling to make assembly easier and prevent melting during baking.
Use a cookie scoop for uniform size and even baking.
