Ingredients
1 pie crust
2 medium apples, peeled and diced
2 tablespoons brown sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
4 ounces cream cheese, softened
2 tablespoons granulated sugar
1 egg yolk
1/2 teaspoon vanilla extract
1 tablespoon butter
Instructions
1. Peel and dice apples, then cook in a skillet with butter, brown sugar, cinnamon, and nutmeg until soft but not mushy.
2. In a mixing bowl, blend cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
3. Roll out pie crust and cut circles to fit into a muffin tin. Press into each cup to form the base.
4. Spoon a small amount of cheesecake filling into each crust, followed by a scoop of sautéed apples.
5. Optionally top with a small lattice crust.
6. Bake at 350°F (175°C) for 20–25 minutes or until golden and set.
7. Let cool in the tin, then transfer to a rack. Serve warm or chilled.
