Ingredients
2 boneless skinless chicken breasts
2 eggs
½ cup grated Romano cheese
¼ cup grated Parmesan cheese
½ cup Italian breadcrumbs
¼ cup all-purpose flour

Instructions
1. Pound the chicken breasts to even thickness and season both sides with salt and pepper.
2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with the breadcrumb and cheese mixture.
3. Dredge each chicken breast in flour, then dip into the egg, and finally coat with the cheese and breadcrumb mix.
4. Heat oil in a skillet over medium heat and cook the chicken for 4–5 minutes per side until golden brown and cooked through.
5. Remove the chicken and place on a paper towel–lined plate to drain.
6. Serve hot with your favorite sides or pasta.
