Ingredients
2 medium russet potatoes
1 tablespoon olive oil
1 ½ teaspoons salt
½ teaspoon black pepper
1 cup shredded cheddar cheese
2 tablespoons chopped green onions or chives
¼ cup sour cream (optional)
2 slices cooked bacon, crumbled (optional)
Instructions
1. Preheat oven to 400°F. Scrub potatoes, prick with a fork, and bake for 45–50 minutes until tender. Let cool slightly.
2. Slice potatoes in half lengthwise. Scoop out the insides, leaving about a ¼-inch shell.
3. Brush both sides of the skins with olive oil and season with salt and pepper.
4. Place skin-side up on a baking sheet and bake for 10 minutes. Flip and bake another 10 minutes.
5. Flip again so the hollow side is up. Fill each skin with cheddar cheese and optional bacon.
6. Bake for 5–7 minutes until the cheese is melted and bubbling.
7. Garnish with green onions and optional sour cream. Serve immediately.
Notes
Use russet potatoes for the crispiest skins.
Don’t over-scoop the inside — leave a bit of potato for texture.
Reheat leftovers in the oven to keep them crispy.
