Description

A rich and creamy Cheddar Garlic Herb Potato Soup packed with sharp cheddar, buttery potatoes, fresh herbs, and garlic. Perfect for cozy dinners or meal prep, this easy potato soup is comforting, customizable, and made in one pot. Great for weeknights or family gatherings.


Ingredients

2 tablespoons butter

1 small onion, diced

3 cloves garlic, minced

2 tablespoons all-purpose flour

4 cups chicken or vegetable broth

4 cups Yukon gold or russet potatoes, peeled and chopped

1 cup milk or heavy cream

2 cups sharp cheddar cheese, shredded

1 teaspoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

Salt and pepper to taste


Instructions

1. Melt butter in a large pot over medium heat. Add diced onion and cook until translucent.

2. Stir in minced garlic and cook for 1 more minute until fragrant.

3. Sprinkle in the flour and stir constantly for 1–2 minutes to form a roux.

4. Gradually whisk in the broth until smooth.

5. Add the chopped potatoes and bring to a gentle boil. Reduce heat and simmer until potatoes are tender, about 15–20 minutes.

6. Blend the soup using an immersion blender or regular blender until smooth (leave chunks if preferred).

7. Stir in the milk or cream followed by the shredded cheddar until fully melted and smooth.

8. Add chopped thyme and parsley. Season with salt and pepper to taste. Simmer for a few more minutes and serve hot.

Notes

Use freshly shredded cheese for the best melt and texture.

Don’t over-blend if you like some potato chunks for added texture.

Add toppings like crumbled bacon or green onions for extra flavor.
