Description

Ingredients

4 large carrots

2 tablespoons sesame seeds

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon maple syrup

1 clove garlic, minced

1 teaspoon fresh grated ginger

2 scallions, thinly sliced


Instructions

1. Peel the carrots and use a vegetable peeler to shave them into long, thin ribbons. Place them in a large bowl.

2. In a dry skillet over medium heat, toast the sesame seeds until golden and fragrant. Let them cool.

3. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, maple syrup, garlic, and ginger.

4. Pour the dressing over the carrots. Add the toasted sesame seeds and scallions. Toss well to coat.

5. Let the salad sit for at least 10 minutes before serving, or chill for up to an hour for deeper flavor.

Notes

Use large carrots for better ribbons and texture.
