Ingredients
3 large yellow onions
4 tablespoons olive oil
1 teaspoon salt
3 cloves garlic, minced
1 teaspoon red pepper flakes
12 ounces linguine or spaghetti
1 cup reserved pasta water
2 tablespoons butter
1/2 cup grated Parmesan cheese
Instructions
1. Thinly slice the onions. In a large skillet over medium-low heat, add 2 tablespoons of olive oil and the onions. Cook slowly for 30 to 40 minutes, stirring often, until caramelized and golden.
2. While the onions cook, heat the remaining olive oil in a small saucepan. Add garlic and red pepper flakes. Simmer on low for 2 to 3 minutes until fragrant. Do not burn the garlic. Remove from heat and set aside.
3. Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of the pasta water before draining.
4. Add the drained pasta to the skillet with the caramelized onions. Pour in the chilli oil and a splash of the reserved pasta water. Toss to coat evenly.
5. Stir in the butter and Parmesan cheese. Add more pasta water as needed to loosen the sauce until it becomes silky and coats the pasta.
6. Serve immediately with extra Parmesan and a drizzle of chilli oil on top.
Notes
This pasta is best served fresh for maximum flavor and texture.
If reheating, add a splash of water to revive the sauce and prevent dryness.
Adjust the amount of red pepper flakes to match your spice preference.
