Ingredients

1 ½ cups graham cracker crumbs

6 tablespoons unsalted butter, melted

24 oz cream cheese, softened

¾ cup granulated sugar

¼ cup brown sugar

3 large eggs

1 teaspoon vanilla extract

2 tablespoons espresso or 2 teaspoons espresso powder dissolved in 1 tablespoon hot water

¾ cup sour cream

½ cup caramel sauce (plus more for serving)


Instructions

1. Preheat the oven to 325°F and line a springform pan with parchment paper.

2. Mix graham cracker crumbs and melted butter until combined like wet sand. Press into the bottom of the pan. Bake for 10 minutes, then let cool.

3. Beat cream cheese until smooth. Add granulated sugar and brown sugar, beating until creamy.

4. Add eggs one at a time, mixing on low speed.

5. Stir in vanilla extract, espresso mixture, and sour cream. Mix until just combined.

6. Pour the filling over the crust. Warm caramel sauce slightly and drizzle over the top in a spiral. Swirl gently with a skewer or knife.

7. Bake the cheesecake in a water bath for 50–60 minutes, until the center is just set.

8. Turn off the oven and crack the door. Let cheesecake cool for 1 hour in the oven, then refrigerate at least 4 hours or overnight.

9. Before serving, drizzle extra caramel on top. Garnish with espresso beans or a dusting of cocoa if desired.
