Description

Ingredients

1 pound rigatoni pasta

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

3 tablespoons salted butter

4 garlic cloves, minced

1 tablespoon olive oil

1 cup heavy cream

1 cup shredded Parmesan cheese

4 ounces cream cheese

1 cup shredded mozzarella cheese

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Boil a large pot of salted water and cook rigatoni until al dente. Drain and set aside.

2. Cut chicken breasts into strips and season with Cajun seasoning, salt, and pepper.

3. In a skillet, heat olive oil and cook chicken until golden and cooked through. Set aside.

4. In the same skillet, melt butter and sauté garlic until fragrant.

5. Add heavy cream and cream cheese, stirring until smooth.

6. Stir in Parmesan and mozzarella until melted into a creamy sauce.

7. Return rigatoni and chicken to skillet. Toss to coat in sauce.

8. Add pasta water if needed to thin the sauce.

9. Garnish with chopped parsley and more Parmesan before serving.

Notes

Use freshly shredded cheeses for best melt and texture.

For less heat, reduce Cajun seasoning or use a mild blend.
