Ingredients
1 pound chicken breast
8 ounces linguine
1 tablespoon Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
Salt and pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
2. Heat butter and olive oil in a large skillet over medium-high heat.
3. Sear chicken on both sides until golden and cooked through. Set aside.
4. Cook linguine in salted boiling water until just shy of al dente. Reserve 1/4 cup pasta water and drain.
5. In the same skillet, melt butter and sauté minced garlic until fragrant.
6. Add heavy cream and parmesan, stirring until smooth and slightly thickened.
7. Add pasta to the sauce, using reserved pasta water if needed to loosen.
8. Slice the chicken and place over pasta.
9. Simmer together for 1 to 2 minutes.
10. Garnish with parsley and serve hot.
Notes
This dish is best served immediately, but leftovers reheat well with a splash of cream.
You can substitute shrimp or sausage for the chicken for a twist.
