Ingredients

1 lb chicken breast

2 tbsp Cajun seasoning

1 tbsp olive oil

3 garlic cloves, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

8 oz spaghetti

2 tbsp butter

1/2 tsp salt

1/2 tsp black pepper


Instructions

1. Slice the chicken breasts into bite-sized strips and coat them generously with Cajun seasoning.

2. Heat olive oil in a large skillet and sear the chicken over medium-high heat until golden and cooked through. Set the chicken aside.

3. Bring a large pot of salted water to a boil. Cook the spaghetti until al dente and reserve 1 cup of pasta water before draining.

4. In the same skillet used for chicken, melt butter and sauté the garlic until fragrant.

5. Add the heavy cream and let it simmer gently.

6. Stir in mozzarella and Parmesan cheese until smooth and melted. Season with salt and pepper to taste.

7. Return the chicken and spaghetti to the skillet, tossing everything together.

8. Add reserved pasta water a little at a time if the sauce needs thinning.

9. Serve hot with extra Parmesan or chopped parsley.

Notes

Make sure the spaghetti is cooked al dente to hold up in the sauce.

Use freshly grated cheese for the best melting and flavor.
