Ingredients

16 oz rotini pasta

1 lb chicken breast, cut into bite-sized pieces

2 tbsp Cajun seasoning

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup Velveeta cheese, cubed

1 cup shredded mozzarella cheese

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped parsley (optional)

1/2 cup reserved pasta water (as needed)


Instructions

1. Boil rotini pasta according to package directions until al dente. Drain and reserve 1/2 cup of pasta water.

2. Season chicken pieces with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and fully cooked. Remove and set aside.

4. In the same skillet, sauté minced garlic for 30 seconds.

5. Add heavy cream and bring to a gentle simmer.

6. Stir in Velveeta and mozzarella until melted and creamy.

7. Add cooked pasta and chicken back to the skillet. Stir to coat everything evenly.

8. If sauce is too thick, add a bit of the reserved pasta water.

9. Adjust seasoning if needed and garnish with parsley. Serve hot.

Notes

This dish can be made spicier by adding extra Cajun seasoning.

Reheat leftovers with a splash of milk or cream to revive the creamy texture.

You can substitute rotini with penne or cavatappi.
