These Butter Swim Parmesan Roasted Potatoes are crispy on the outside, tender on the inside, and packed with buttery, cheesy flavor. Made with Russet or Yukon Gold potatoes, butter, and Parmesan, they’re the perfect comfort food side dish for dinner or holiday feasts. Easy, oven-baked, and family-friendly!
Ingredients
4 large Russet or Yukon Gold potatoes
1 cup unsalted butter
1 cup freshly grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Slice the potatoes into thick rounds, about 1/2 inch each. No need to peel unless you prefer them skinless.
2. Preheat your oven to 400°F (200°C).
3. Place butter in a 9×13 baking dish and melt it in the oven. Once melted, swirl to coat the bottom.
4. Stir in garlic powder, onion powder, paprika, salt, and pepper into the melted butter.
5. Arrange the potato slices in a single layer in the buttered dish, slightly overlapping if needed.
6. Sprinkle half of the Parmesan cheese over the potatoes.
7. Bake uncovered for 30 minutes.
8. Flip the potato slices carefully, sprinkle the remaining Parmesan, and bake for another 20-25 minutes until golden and crispy.
9. Garnish with chopped parsley and serve hot.
Notes
Make sure the butter is fully melted and seasoned before adding the potatoes.
Don’t overcrowd the pan to keep edges crispy.
For extra crispiness, broil the last 2 minutes of baking.
