Ingredients
1 lb chicken breast
1 cup buttermilk
1 tsp garlic powder
1 cup flour
2 cups oil for frying
1/3 cup buffalo sauce
1 tbsp butter (for sauce)
1/2 tsp garlic powder (for sauce)
12 oz twisted pasta (rotini or fusilli)
1 cup heavy cream
1/4 cup cream cheese
1/2 cup grated Parmesan cheese
1 tbsp Cajun seasoning
1 tbsp ranch seasoning
1 tbsp butter (for sauce)
2 tbsp chopped fresh parsley
Instructions
1. Cut chicken breast into bite-sized pieces and marinate with buttermilk, garlic powder, and a pinch of salt for at least 30 minutes.
2. Dredge marinated chicken in seasoned flour. Heat oil and fry until golden and crispy. Drain on paper towels.
3. In a small saucepan, warm buffalo sauce with melted butter and garlic powder. Toss fried chicken to coat.
4. Boil pasta in salted water until al dente. Reserve a bit of pasta water and drain.
5. In a skillet, melt butter, whisk in heavy cream and cream cheese until smooth. Add Parmesan, Cajun seasoning, and ranch seasoning. Simmer until creamy.
6. Add pasta and a splash of pasta water. Toss to coat completely.
7. Plate the pasta and top with buffalo garlic chicken bites. Garnish with chopped parsley and extra Parmesan if desired.
Notes
Make sure the oil is hot before frying to get that perfect golden crisp.
Reserve pasta water to help emulsify the sauce.
Adjust spice level by modifying the amount of buffalo and Cajun seasoning.
