Description

These Buckeye Brownie Cookies are the ultimate chocolate peanut butter dessert! Fudgy brownie mix cookies topped with a creamy peanut butter center and smooth chocolate coating — perfect for parties, holidays, and freezer snacks. This easy cookie recipe is chewy, indulgent, and full of Reese’s-like flavor.

Ingredients

1 box brownie mix

2 large eggs

1/4 cup vegetable oil

3/4 cup creamy peanut butter

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons milk or heavy cream

Instructions

1. In a bowl, mix the brownie mix, eggs, and vegetable oil until a thick dough forms.

2. Scoop tablespoon-sized dough, roll into balls, flatten slightly, and place on a baking sheet lined with parchment paper.

3. Preheat oven to 350°F (175°C) and bake cookies for 8 to 10 minutes. Let them cool 5 minutes on the tray, then transfer to a wire rack.

4. In another bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth. Roll into small balls.

5. Place a peanut butter ball on each cooled cookie and gently press down to flatten.

6. Melt chocolate chips with milk or cream in a microwave-safe bowl or double boiler until smooth.

7. Drizzle or spoon chocolate over the peanut butter layer.

8. Let cookies sit until chocolate sets, then serve or store.

Notes

These cookies freeze beautifully — just layer with parchment paper.

For best results, use a fudgy brownie mix, not cakey.

Refrigerate if your kitchen is warm to keep the chocolate firm.
