Description

Ingredients

2 pounds chicken breasts

2 cups cherry tomatoes, halved

3 cloves fresh garlic, minced

2 tablespoons balsamic vinegar

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

¾ cup breadcrumbs

¼ cup fresh basil, chopped

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Preheat oven to 375°F. Grease a baking dish and lay the seasoned chicken breasts in a single layer. Drizzle with olive oil and bake for 20 minutes.

2. In a bowl, combine halved cherry tomatoes, minced garlic, balsamic vinegar, olive oil, salt, pepper, and Italian seasoning. Let it marinate while the chicken bakes.

3. Remove chicken from oven. Spoon the tomato mixture over the chicken. Top with mozzarella, Parmesan, and breadcrumbs.

4. Return to oven and bake for another 15–20 minutes, until cheese is bubbly and topping is golden.

5. Garnish with fresh chopped basil before serving.

Notes

This dish tastes even better the next day, as the flavors continue to develop.

Use chicken thighs for a juicier alternative to chicken breasts.
