Ingredients
2 cups cooked chicken
2 cups cooked rice
2 cups broccoli (chopped, fresh or thawed if frozen)
2 cups shredded cheddar cheese (divided)
1 can (10.5 oz) cream of chicken soup
1/2 cup milk
1/2 cup diced onion
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large bowl, mix cooked chicken, cooked rice, broccoli, 1 cup cheddar cheese, cream of chicken soup, milk, onion, garlic powder, salt, and pepper.
3. Transfer the mixture to the baking dish and spread evenly.
4. Sprinkle the remaining 1 cup of cheddar cheese over the top.
5. Bake for 30–35 minutes until hot, bubbly, and golden on top.
6. Let the casserole rest for 5 minutes before serving.
Notes
Use leftover rotisserie chicken for convenience.
Substitute white rice with brown or cauliflower rice for a healthier twist.
If using frozen broccoli, thaw and drain before mixing.
