Ingredients
450g ground pork
1 tsp salt
1/2 tsp black pepper
1 tsp dried sage (or 1 tbsp fresh, finely chopped)
1/2 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp crushed red pepper flakes
1 tbsp brown sugar or maple syrup
2 tbsp ice water (optional)
Instructions
1. In a large bowl, combine the ground pork with salt, pepper, sage, thyme, garlic powder, onion powder, red pepper flakes, and brown sugar or maple syrup. Mix just until combined.
2. Divide the mixture into 8 equal parts and shape each into a flat patty or small sausage link.
3. Chill the shaped sausages in the refrigerator for 15–20 minutes to help them hold shape.
4. Heat a skillet over medium heat and lightly oil the surface if needed. Cook patties for 4–5 minutes per side, or until golden brown and internal temperature reaches 160°F (71°C).
5. Serve hot or let cool for storage. Refrigerate for up to 4 days or freeze for up to 2 months.

Keep the meat cold while mixing to help with texture.
Use a meat thermometer to ensure sausages are fully cooked.
Customize spices to taste—add smoked paprika or fennel for variety.
